Vegetarian Goulash
16 oz Seitan (cubed)
2 Bell Peppers (short strips)
2 Red Onions (minced)
2 Cloves of Garlic (minced)
½ tsp. Caraway Seeds (crushed)
Seasoning Salt and Pepper to taste
1 tsp. Hot Paprika
2 tsp. Smoked Paprika
3 tsp. Sweet Paprika
2 ½ tbl. Tomatoe Paste
2/3 Cup Water
2/3 500 mL Rye Beer (Bison Brewing Reunion ’08 Red Rye brewed w/caraway seeds)
Saffron Ribbon Noodles
Garnish
Sour Cream
Flat Leaf Parsley
Heat some olive oil and cook the onions for a minute. Add the bell peppers and garlic; cook until tender. Add liquid ingredients and then the rest. Simmer until thickened. ~45 minutes.
Meanwhile, bring a pot of salted water to a boil. Cook noodles according to instructions.
Place noodles center of a wide, shallow bowl. Spoon goulash in the middle and provide plenty of sauce along the edges. Garnish with sour cream dollops and parsley sprigs on top.
Blends beautifully with any rye beer. The special offering by Bison et. al. featured caraway seeds. Probably better for drinking as I think the subtleties get lost somewhere in the pot. But I like to think that it adds an extra edge, even though realistically that’s probably not true.

A Simple Sandwich
Food: It all starts with open faced peanut butter sandwiches on dark rye bread. If you must you can do a bit of jelly or chutney (see recipe).
Beer: Most of your fruit lambics are suitable as well as Flemish Reds. Sam Adams Cranberry Lambic is ideal but difficult to find. Van Steenberge’s Monk’s Café Flemish Sour Ale is a good
Cranberry Chutney
1 16 oz. Fresh or Frozen Cranberries
1/2 cup sugar
2 12 oz. Bottles of Sweet Kriek or Framboise
¼ tsp. Ground Cloves
A splash of aged balsamic vinegar (optional)

This simple meal is nourishing and surprisingly satisfying.

Tasting notes: Leaves a wet clay coating on tongue. Tastes of rich chocolate liqueur and molasses with a powdered mocha finish. Pours a burnt mahogany with a dirt singed crater. Slightly thin, smooth body.
Food: Praline fudge.
Notes: This beer is amazingly slick and has an essence of chocolate. Clean drinking and smooth. Reminds me of a newly opened chocolate bar and how smooth untouched chocolate can be.

Tasting Notes: Toasted biscuits with apricot jam and the pepper picked up from your eggs. A soft powder coats the mouth like well-kept skin under a velvet glove. A white grape color with a good froth fills the glass. Not overly carbonated.
Food: A blend of canapés: capers, sweet onions, bell peppers, and caviar.
Notes: Dry fruit with a fluffy mineral quality.

Food: Coconut meringues or a pina colada pie.
Notes: Would look beautiful in a champagne coupe. This beer screams, ‘celebrate’, like the relatives at a wedding. At $20 for a 750 it is best kept for celebrations as well.
