Charles Heidsieck Brut Rerserve (’05 or ’99) 12/31/08

Tasting Notes: Toasted biscuits with apricot jam and the pepper picked up from your eggs. A soft powder coats the mouth like well-kept skin under a velvet glove. A white grape color with a good froth fills the glass. Not overly carbonated.

Food: A blend of canapés: capers, sweet onions, bell peppers, and caviar.

Notes: Dry fruit with a fluffy mineral quality.
